We have pizza most Sunday nights. I try to vary it so we don’t get bored. Tonight was a caramelized onion mushroom pizza.
I use the pizza crust below (from the freezer section in Whole Foods) b/c it’s very thin and whole wheat. But use whatever you like or make your own if you’re ambitious!
You’ll need a red onion, mushrooms and peppers, a garlic clove, fresh parsley and thyme, and sherry vinegar.
I used my small mandolin to slice the onion. Then put it in a non stick pan with a TB of heated olive oil. Cook for 5 minutes and then turn the burner down to low and cook for 15 more min for the onions to caramelize.
Once the onions have cooked down, put them aside and wipe out the pan. Add another TB of olive oil and heat it. Then add the mushrooms and peppers if you’d like. Cook that down and remove from the heat. Add the minced garlic, parsley, thyme, and a TB of sherry vinegar.
Set oven to 450.
Take thawed pizza crust and spread onions over it. Then add the mushroom mixture. At this point you can just sprinkle a some parmesan cheese over it or if you want to make it more cheesy, add whatever amount of cheese(s) you’d like. Remember that cheese is high in protein and fat so choose with that in mind!
Cook pizza until the crust is crispy and cheese is bubbling.
