Tuesday night is usually tacos at my house. What kind you make (fish, chicken, beef), you need to make this slaw to go on top! It’s easy, healthy and oh, so good!
What you’ll need:
Head of green cabbage – shredded
2 Green onions – chopped
Fresh jalapeno pepper – deseeded and finely chopped – I don’t use the whole pepper. It just depends on how much heat you want.
Handful of chopped cilantro
Rice vinegar (sub in white wine vinegar or apple cider vinegar if you don’t have rice vinegar)
Salt and Pepper
Assemble together the first 4 ingredients. Pour in the vinegar so that it just wets the cabbage mixture.
Add salt and pepper to taste and stir it up well.
