If you’re looking for a healthy, fun substitute for rice or couscous, this is it! You can use it in a stir-fry or for any dish that calls for rice.
What you’ll need:
A head of cauliflower
A box grater or food processor
Olive Oil
What you’ll do:
Wash the head of cauliflower and trim away the leaves. Cut it into 4 quarters so it’s easier to handle.
I use a box grater because clean up is easier. Use the side with medium sized holes and grate away!
After you’ve done that, take a paper towel and press any extra water out of the cauliflower crumbles.
Use a large sauce pan over medium high heat and add 1 Tbsp of olive oil. Add the crumbles and cook for 8-10 minutes. It will turn slightly brown. You may need to cover it for a bit until it gets tender.
Season it to taste with salt and pepper….or whatever you’d like!
