Black Bean and Walnut Burgers

These burgers are easy to put together and make enough for 8 people.  I make the whole recipe and then freeze what I don’t use.  Love a go to meal in the freezer!

 

What you’ll need:

2 15 oz. cans of black beans (or sometimes I use a can of white beans and a can of black beans) – rinsed and drained

2 tsp. ground cumin

3 tsp. chili powder

1/8 – 1/4 tsp. cayenne pepper

1/2 cup cooked brown rice

1/2 cup chopped walnuts

1/3 cup chopped red onion – sometimes I throw in a few chopped peppers if I have them on hand.

3 Tbs. frozen or fresh corn off the cob

1/3 cup of cornmeal

 

What you’ll do: 

In a food processor or blender, puree 2 1/2 cups of black beans with the cumin, chili powder, and cayenne pepper until smooth.

Add in rice, walnuts, onion, corn and remaining beans and pulse 2 or 3 times to mix in.  You don’t want the mixture to be dry but it should be stiff.  Add some water to moisten if you need to.  Season with salt and pepper.  Cover and chill if making ahead.

Divide the mixture into 8 burgers.  Dredge the burgers in cornmeal.  Chill for 30 minutes (if you didn’t make it earlier and chill it then).

Coast a nonstick pan or grill with cooking spray.  Cook burgers over medium heat for 4 minutes on each side.  The idea is to make sure it’s heated through.

Put on a salad or bun and top with guacamole and salsa!
