Kim’s Breakfast Eggs

My dear friend from college, Kim, introduced me to this delicious recipe.  I make it all the time!  Thank you, Kim!!

What you’ll need:

fresh eggs

good quality olive oil

salt, pepper, and Italian seasoning

optional – serve with avocado and tomatoes

What you’ll do:

Place the eggs in a saucepan and add water so that it covers the eggs by an inch.  Use the egg timer in the pan as well.  With this timer, I don’t have to know how long to cook a hard boiled egg.  I love that!  I just wait until all the bright red turns a dark and it’s done.

Carefully pour out the water and run cold water over the eggs so that you can peal them without burning your fingerprints off.

Slice the egg into into quarters, drizzle olive oil over it, sprinkle with salt, pepper and Italian seasoning to taste.
