Fish Tacos

I probably make this once a week.  Definitely a favorite!  Also I want to say, I’m doing this blog to push myself and to help others, not for money.  Endorsing a product is only to let you know what I like to use.  That said, the next time you’re in Costco, get a bag of the frozen tilapia loins.  They are great to have in the freezer and I like that there’s a little more substance to them as compared to the ones in the grocery store.  They work super for fish tacos.

For the fish:

Use the quick thaw method and then place them in a dish for seasoning.  I either sprinkle them with Old Bay or a taco seasoning.

Use a grill pan on the stove top and spray it with oil or put in a tablespoon of olive oil.  Let the pan get good and hot before placing the fish in it.  Cook fish on each side for 3-4 minutes.  I always cut into it a little to make sure it’s done all the way through.

For the guacamole:

Get a ripe avocado – soft to the touch but not too mushy.  Cut it open and slice it into cubes in a dish. Mash it up.   Chop up tomatoes, squeeze at least a half of lemon in it, and add a good amount of salt and pepper.  Sometimes I use a tablespoon or 2 of high quality salsa (like Green Mountain Gringo) instead of the tomatoes. If you want it to have a little kick, put in a dash of Tabasco sauce.  Mix it into the avocado.  You have to taste it to see if it has the right amount of everything!  The key is lots of lemon and a good amount of salt.

I always use Cabbage Slaw (posted in April) on my tacos, never lettuce!!  FYI, also no cheese on tacos!

And then there is the ‘special sauce’!

There are 3 ingredients that go together and make a great topping for any taco!

I dollop of plain greek yogurt, and 1/2 cup of the good salsa, and a spoonful of TJ’s jalapeño cilantro hummus.  Mix it all together and you have the secret sauce!!

You can use whatever kind of taco shell you like.  I prefer the corn tortillas that I heat in the oven for a couple minutes so they are still ‘bendy’ but in the picture below you’ll see one hard, crunchy one and one bendy tortilla.
