Celebrating warmer weather with the making of this salad!
The next time you go to Costco, pick up a container of crabmeat (it’s pasteurized) and you’re on your way to making this yummy recipe.
Use your favorite lettuces, grape tomatoes, and cucumbers for the salad.
Empty the crab out of the container and then cut the bottom out of it (*see below for a tip on the best tool to use for this!) Turn the cylinder upside (so the smaller cut end is up) on the middle of the plate and start loading up your ‘tower’. In this one I layered crabmeat, crumbled hard boiled egg, diced avocado, and then another layer of crabmeat topped with Old Bay seasoning. It looks impressive but is so easy!
I made a light vinaigrette to go on it but you could buy one if you wanted. Dressings really are easy to make and much better for you. There can be a ton of calories even in a vinaigrette…this could be why people say to me “I feel like I’m eating salad all the time but I’m not losing weight”!
Here’s all I did for the dressing:
Mix together a couple Tbls of white wine vinegar, a tsp of dijon mustard (I like Maille), a tsp of honey and a pinch of salt and fresh ground pepper. Most recipes call for A LOT of olive oil to be added at this point. I just whisk in the oil slowly until it tastes right to me. It’s always a ton less than what ‘the recipe calls for’!
Then remember you don’t need to soak the salad with the dressing. You’re just trying to add flavor and moisture. There should be some leftover for tomorrow!
*You have to get one of these tools if you don’t have one already. It’s a universal opener that you can get on Amazon, at Bed, Bath, and Beyond, etc. This thing will open the toughest plastic or packaging that you’ve got. Here’s a picture of mine – it’s well used as you can see!
