Shrimp stir fry

IMG_0862 IMG_0863 Tonight I opened the fridge to see what I could make.  I had  asparagus, snow peas, and mushrooms that needed to be used.  Immediately it became a stir fry night!  I happened to have some frozen shrimp in the freezer but you could make it with chicken or just veggies if you wanted.

I thawed the shrimp and marinaded it in some soy sauce (low sodium Tamari sauce acutally) and mirin, which is a sweetened sake, some chopped green onions and chopped ginger and a 2 cloves of minced garlic.

Toasted sesame seeds are pictured here because they are such a tasty addition to a stir fry.  You can find sesame seeds in the grocery store section with all the spices.  Just throw a handful in a dry pan on medium heat.  Keep and eye on them, stirring often.  Set them aside when lightly browned.  They are a great touch to put on at the end.

Chop whatever veggies you have on hand.  In the picture you can see the asparagus tips and then I cut little more off of the stem to look like chopped celery.

I used a wok shaped pan and heated up 1 T of coconut oil (peanut oil or canola work well too).  Let it get hot and then toss in the shrimp and marinade.  Move it around until the shrimp have curled a bit and are firm.  Try not to overcook shrimp because it will go back in the stir fry and cook a little more.

Remove shrimp from the pan and set it aside on a plate.

Mix together 2T of soy sauce and 1T of rice wine vinegar.  You will pour this in after the veggies have cooked for a bit.

No need to clean out the pan.  Add a little more oil (1t) and then put in the asparagus for a minute.  Next add the rest of the veggies.  Stir frequently.

Add in the soy and vinegar mixture and I also put in a generous squirt of sriracha sauce for some heat.  Toss this together.  When the veggies are done to your liking, then add the shrimp back in and mix it all together.  At this point, give it a taste and then add in what you think it needs, i.e. cracked pepper, salt, etc.

Serve over brown rice. Add the toasted sesame seeds to the top of the dish.

A yummy one dish wonder!!
