In this household we are what they call ‘pescetarians’. This means we eat fish and seafood in addition to veggies but no meat. Awhile ago I went with the popular ‘Meatless Monday’ theme. Most other days of the week we will have some sort of seafood/fish but on Mondays it’s pure vegetarian.
So today is Monday. I’m mindful that we need protein but that can come from nuts, cheese, and other protein sources. Tonight I feel like being very simple.
Pasta with tomatoes, basil and pine nuts
Choose whatever pasta you have on hand. Usually it’s angel hair for me. Cook it according to the directions.
While that’s cooking, chop up tomatoes (grape, cherry or whatever you have!). Add salt and fresh ground pepper to them.
Add 1 T of capers to the tomatoes
In a small pan roast a couple Tablespoons of pine nuts. Keep an eye on them or they will burn to a crisp!
Basil is key to this dish. Chop up at least a 1/2 cup of chopped basil.
After the pasta is done, add it to a large bowl. Add crumbled goat cheese so it melts and looks creamy. Then add the tomatoes, capers, pine nuts and basil.
Add more salt and pepper and a little ground red pepper if you like a bit of heat. Then top with Arugula. My motto is “Everything is better with Arugula.” Finally, pour some decent quality olive oil over the dish and give it a good toss.
